Powerful Anti-inflammatory & Detox Raw Vegan Courgette Pasta
Updated: Apr 14, 2019
These aromatic zucchini noodles are a beautiful treat when you feel like you dragged on an unhealthy eating habit for way too long and it's now time to reset your body. It's also great as part of a Detox regime or anti-inflammatory diet
The courgettes themselves have proven to have a powerful anti-inflammatory effect on the body and as a bonus they also improve digestion, slow down ageing, detoxify the body and even improve thyroid and adrenal functions
The sauce is composed of anti-inflammatory and anti-microbial ingredients like turmeric, ginger, garlic, mustard powder, apple cider vinegar, lime, chia and flax seeds
It's quick and easy to make. All you need is a spirulizer (or peeler, the pasta will be thick and flat but that's good too) a small blender and a serving bowl

Ingredients
2 zucchinis
1/4 cup soaked almonds
1 tbsp chia seeds
1 tbsp flax seeds
2 tbsp ACV
2 dates
1 tiny piece of turmeric
1 tiny piece of ginger
1 garlic clove
2 sticks of fresh rosemary
1/2 tsp mustard powder
the juice of 1/4 fresh lime
1 tsp pink Himalayan salt
1 tsp black pepper
filtered water to preferred consistency, this sauce tastes nice quite creamy. I like to put enough to just about cover the almonds
To garnish
a big handful of activated almonds
1 spring onion, finely sliced
1 celery stick, finely chopped
basil leaves
a drizzle of a good quality organic olive oil
Method
Grind your flaxseeds and chia seeds together in either a mini chopper, a food processor, a spice grinder or a coffee grinder
Spirulize your zucchinis into a salad bowl
Prepare your sauce by adding your soaked almonds, flaxseeds, chia seeds, apple cider vinegar, dates, turmeric, garlic, ginger, fresh rosemary, garlic, mustard powder, salt, black pepper, lime and filtered water to your blender
Pour your sauce over your zucchinis
Garnish with a big handful of coarsely chopped activated almonds, finely sliced spring onion, finely chopped celery, a drizzle of olive oil (important for the absorption of liposoluble vitamins in this recipe) and a bunch of basil leaves
