Fig & Tempeh Salad
Fig season is here and although eating them on their own is one of the best ways to enjoy them, if you just can't get enough, here's a recipe for you :)
Figs are an extremely healthy fruit to add to our diet. They clean us up on the inside, help regulate our hormones, are great for our skin, hair and nails and fantastic after a workout or a yoga session as they are pretty high in potassium and magnesium. Consuming just 3 figs per day can help with weight management too. And just when you thought it didn't get any better, did you know that figs can improve your sleep?
Now, on to the recipe:

Ingredients
3 or 4 heaped handfuls of baby spinach
1 cup of boiling water
4 super ripe and juicy figs
1 block of tempeh
1 tbsp miso
fresh or dried garlic
2 tsp ground black or pink pepper
Vegan feta cheese to taste
1/2 handful of vegan mozzarella (the kind that melts)
1 handful of pine nuts
A drizzle of truffle glaze or truffle oil
Method
Place a bed of spinach into your serving bowl or plate
Heat a skillet with some boiling water and melt the miso in the pan
Add garlic, pepper and the tempeh chopped in bitesized chunks
Turn the heat to low and allow to cook until half of the moisture is gone. At this stage, add the vegan mozzarella, the pine nuts and stir in well. Allow to cook until most of the moisture is absorbed then remove from the heat and allow to cool for 5 minutes while you chop the vegan feta and figs into small dices
Once cooled, place the tempeh over the spinach then add the feta and figs over the top. Add a drizzle of truffle glaze or oil and enjoy :)
